Oat Crunchies recipe

This recipe is the closest I got to making those crunchies that my mother used to make! It was my brother's favourite!

Preheat oven to 180'C

750ml fine desiccated coconut
4 x 250ml rolled oats
250ml cake flour
375ml sugar
3ml salt
5ml cinnamon
250g butter or margarine (melted)
40ml golden syrup (don't be shy with the syrup!)
10ml bicarbonate of soda
65ml milk

1. Combine all the dry ingredients.
2. Add the syrup to the melted margarine.
3. Add the bicarb of soda to the milk.

Line a baking tray (27cm x 37cm) with baking paper.

Combine all the ingredients and mix well with a wooden spoon. Gently spoon the mixture into the lined baking tray and firmly press down with the back of a desert spoon.

Bake for 15 minutes until golden brown. Remove from oven and cut into squares and bake for 5 more minutes. Let the crunchies slightly cool before removing them from the baking tray. Let them cool completely on a drying rack.
