After being on THM for a couple of weeks I started to experiment a bit and here's my beauty! A smooth, rich and moist chocolate cake with the sweetest chocolate topping! GUILT FREE!
Pre-heat oven @ 180' or 350'F
Crack two egg whites into a mug and gently mix with a fork.
Add two tbsp cocoa and 1 tbsp coconut flour.
Mix some more.
Add 1 tbsp of water, a pinch of salt, a dash of vanilla and 3 good pinches of cinnamon.
Mix until smooth.
Add plan approved sweetener - I use 1 teaspoon of stevia.
Add 1/2 teaspoon of baking powder at the last moment and mix thoroughly with a fork.
Spray a metal (camping) mug with Spray&Cook, add the mixture and bake for 15 minutes.
In another metal mug: 1 tbsp good cream cheese, 3 teaspoons of xylitol and 1/2 teaspoon of cocoa.
Mix gently with a teaspoon on a hot plate. Careful not to burn and gently melt all the ingredients and bring to boiling point or until the xylitol has completely melted.
Spoon the icing on top of the cake as soon as it comes out of the oven!
The cake I think is an FP and the icing will make it an S!
